I would like to be able to mix up my german apple cake, the batter is so thick it has burned up more than one hand held mixer. I have shoulder problems so I can not mix the heavy batter. I would make my husband the cake for our upcoming anniversary.

Just over a year ago, I was recovering from a sudden catastrophic illness. Needing to relearn how to walk, talk and use my hands were my everyday challenges. I could never have imagined that 2013 would see me reconnecting with an old friend; somebody that I had not seen in 22 years. It was worth the wait. He is romantic and caring, a great dad to his own children and very kind to mine. He has accepted that I still have some limitations, but miraculously I have little residue from the illness that almost took my life. He has not confined romantic times to any one day; every time we are together he makes some gesture that is of awe worthy romance. Although we will not be seeing one another on Valentine’s Day proper, we will be spending Friday and Saturday together. He has hinted of continued enchantment with the promise of limitless possibilities. He is everything I could have ever dreamed of but never dared. ♡
