Super Simple Super Bowl Cheese Dip
You can’t get much easier than a two ingredient dip. When it comes to the big game, sometimes you need to refill the snacks, STAT! This recipe can be whipped up in minutes and it is sure to satisfy hungry Super Bowl guests.

The dip made from a can of Rotel tomatoes and can of Cheddar Cheese Soup is a classic. We all know it and love it! But this year, I decided to give it a little twist.
I just discovered the Mexican flavored Rotel diced tomatoes at the grocery store made with lime and cilantro. I don’t know if this has been around for a while, but it was new to me! I knew I just had to try it. Then, I figured why not pair the dip with (my favorite) “Hint of Lime” tortilla chips. The result – a super simple, super delicious, Super Bowl Dip!
I was talking with my mom about this recipe, and she said she used to make it for her friends in high school! In fact, she said that she made the classic Rotel and Cheese Dip for Super Bowl I. That’s right, as in the first Super Bowl…ever. (I might have followed up with “How old are you? Do you remember the first olympic games in Ancient Greece too?” Hee, hee…just teasing you Mom.)
She recalled a group of guys from the football team saying, “This is cool, but why are they calling it Super Bowl I? It’s not going to last. Why would they think it would happen every year?” Little did they know at the time what a huge event the Super Bowl would turn out to be! As the saying goes, the more things change, the more they stay the same. This little football game may have become the biggest sporting event of the year, but all these years later we are still enjoying the same delicious snack dip!
Super Simple Super Bowl Dip
1 can (10 oz.) Rotel Diced Tomatoes with Lime Juice and Cilantro
1 can (10 3/4 oz.) Cheddar Cheese Soup
1 bag (13 oz.) Tostitos “Hint of Lime” tortilla chips
Optional Garnish: fresh cilantro, twist of lime
Combine the diced tomatoes and cheese soup in a medium saucepan. Warm over medium heat and serve immediately. Garnish with fresh cilantro and lime, if desired. Serve with lime tortilla chips.
