Take your holiday meals to a whole new level by making homemade dinner rolls or biscuits.  These unique biscuits are made with sweet potatoes and pair well with roast pork or chicken dishes.   My favorite part is a generous spread of the Orange-Honey Butter…sometimes I even end up enjoying the leftover biscuits for breakfast the next morning!

The secret ingredient that really takes this recipe to a whole new level is the Greek yogurt.  I love cooking with this thick and creamy  yogurt because it always makes baked goods nice and moist, while adding a richness of flavor without added fat.

I also like to add a dash of pumpkin pie spice into the mix as well.  It’s a fun, seasonal flavor blend and a great way to use up an ingredient you still have on hand from Thanksgiving!

Sweet Potato Biscuits with Orange-Honey Butter

1-3/4 cups all purpose flour, plus extra for work surface

2 Tablespoons light brown sugar

2-1/2 teaspoons baking powder

1 teaspoon Pumpkin Pie Spice

1 teaspoon salt

1/2 teaspoon baking soda

7 Tablespoons cold unsalted butter, divided

3/4 cup cooked and finely mashed plain sweet potatoes

1/3 cup plain Greek yogurt

Orange-Honey Butter:

1/4 cup softened unsalted butter

1 teaspoon honey

1/2 teaspoon grated orange rind

For biscuits: Heat oven to 425 degrees. Place flour, brown sugar, baking powder, Pumpkin Pie spice, salt, and baking soda in a medium mixing bowl and mix well to combine; set aside. Melt 1 Tablespoon of the butter and set aside. Cut the remaining 6 Tablespoons cold butter into pieces, and using a pastry blender, cut butter into flour mixture until mixture resembles coarse meal. In another bowl, mix together the mashed sweet potatoes and yogurt. Stir potato mixture gradually into flour mixture and stir to form a ball. Place the dough onto a lightly floured surface and knead a couple times, then pat mixture to 1-inch thickness. Using a 2-1/2 inch biscuit cutter, cut into 8 biscuits, gathering scraps to repeat, without reusing scraps more than once. Brush some of the melted butter in an 8-inch cake pan. Arrange biscuits in pan, fitting tightly. Brush remaining melted butter on biscuits. Bake for 18-20 minutes, or until golden. Serve immediately with orange-honey butter. Makes 8 biscuits.

For Orange-Honey Butter: Place all butter ingredients in a small bowl and stir to blend well.

The very best Sweet Potato Biscuits are in Durham, NC at “Mama Dips” restaurant. She has written atleast one cookbook which has this recipe. The only fault I found is that you need to make a double batch!! Easy to make and you don’t have to run to the store to purchase any special ingredients.
