Easy and Elegant Cheddar Soup
I could enjoy a bowl of soup every night of the week and be perfectly happy. Especially this time of year when a piping hot bowl of soup can warm you from the inside out. This recipe for a creamy cheddar soup can be made in a snap, yet has an air of sophistication.
Start by selecting a bottle of your favorite dry white wine. There’s a splash in the soup and the rest can be served with dinner!

Creamy Vidalia Onion Cheddar Soup with White Wine and Fresh Herbs (click here to print recipe)
2 Tablespoons Butter
1/2 Cup Finely Chopped Vidalia Onion
1/4 Cup Minced Celery
2 Tablespoons Flour
1/2 Teaspoon Pepper
1/2 Teaspoon Dry Mustard
1 Cup Milk
1 (10 3/4 Ounce) Can Chicken Broth
1/4 Cup Dry White Wine
2-1/4 Cups Shredded Sharp Cheddar Cheese
1 Tablespoon Fresh Chives, snipped
Melt the butter in a 2-quart saucepan over medium heat. Add the onion and celery and cook for 3 minutes. Stir in the flour, pepper, and dry mustard. Slowly stir in milk and broth. Stir in white wine. Allow mixture to come to a boil and cook for 1 minute, stirring constantly. Stir in cheese. Reduce heat to low, and stirring constantly, cook until cheese is melted. Ladle into 4 soup bowls. Garnish each bowl with fresh chives sprinkled on top.
