Spiced Holiday Muffins

Can you believe Thanksgiving is tomorrow?!  Right about now, families are finishing up grocery lists and firing up the ovens in preparation for the big day.  Others are hopping on airplanes to see loved ones for the holidays.

If you are hosting overnight guests for the next few days, consider making a batch of these muffins to serve at breakfast.  They can easily be prepared in advance and your guests can serve themselves in the morning!

This recipe is great because it uses so many ingredients you might already have on hand for Thanksgiving preparations.  The batter is made with pumpkin puree, cardamom, cinnamon, and nutmeg.  Then there is a crumble topping with walnuts, cinnamon and sugar.  Divine!

Spiced Holiday Muffins

1 cup milk

1 cup canned pumpkin puree

2 eggs, beaten

1/4 cup vegetable oil

2 cups all-purpose flour

1/4 cup sugar

3 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon ground cardamom

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon butter, melted

1/4 cup finely chopped walnuts

3 tablespoons sugar

1/4 teaspoon ground cinnamon

1.  Preheat oven to 400 degrees F.  Place milk, pumpkin, eggs and vegetable oil in medium bowl.  In another bowl, mix flour, 1/4 cup sugar, the baking powder, salt, cardamom, 1/2 teaspoon cinnamon, and the nutmeg.  Stir into liquid mixture just until thoroughly moistened.

2.  Grease bottoms only of muffin cups.  Fill muffin cups 2/3 full.   Brush tops lightly with melted butter.  Mix walnuts, 3 tablespoons sugar, and 1/4 teaspoon cinnamon.  Sprinkle muffins with nut mixture.  Bake until golden brown, 20 to 25 minutes.
