Cold Lemon Soba Noodles

I am always on the lookout for easy, make-ahead recipes that can be pulled from the fridge when I need a quick bite. Cold noodle salads are perfect for packing a lunch on-the-go, or dinner when you are just too tired to cook. This recipe using soba noodles is my new go-to favorite!

Soba is the Japanese word for buckwheat, and these noodles are made from buckwheat flour. I have always loved the hearty taste of buckwheat, plus it has more amino acids, nutrients and antioxidants than other noodles. Give this easy recipe a try and I think it will soon be one of your new favorites too!
Cold Lemon Soba Noodles
12 ounces Soba (buckwheat) noodles
1/2 cup lemon juice
4 tablespoons soy sauce
4 teaspoons sesame oil
4 teaspoons finely chopped fresh ginger
1/2 cup chopped fresh cilantro
lemon slices, for garnish
Cook noodles according to package directions. Drain and rise with cold water until cool; drain again. Place in a large bowl.
In a small bowl, stir together lemon juice, soy sauce, sesame oil, and ginger; pour over noodles. Add cilantro and toss. Serve on chilled plates. Makes 2 servings.

Can this be served warm? I am not a big fan of cold noodles.

If you prefer warm noodles, I don’t see why it wouldn’t work. However there is something about this combination of soba, lemon and cilantro tastes great cold!

What is the nutritional breakdown? I am always concerned about sodium and protein.
I would use whole wheat noodles in place of buckwheat. Noodles are starchy but I love pasta and don’t eat it often because it bloats me up immediately.Maybe ww pasta or might try the buckwheat pasta,be wonderful If I could eat pasta again.Never tried a cold noodle salad but this looks good.
Can Shirataki noodles be substituted for the Soba noodles? I’m on the HCG diet and I ordered a bunch of Shirataki noodles as they are a “free” food on any diet. Would like lots of feedback and more recipes, please.
Simple food is often the best and how good noodles can be. We often cook noodles hot for our Chinese meals, but actually cold in a salad sounds great as well. Especially on a hot summers day.
