Sometimes I really want dessert, but I just can’t bring myself to order an entire slice of cake or bake an entire pie. (I know those leftovers will be just too tempting!) Honestly, sometimes just a little nibble of something sweet does the trick. That’s when this recipe for “Cheesecake Stuffed Strawberry Bites” is the answer!

There’s no need to indulge in an entire slice of cheesecake when it is so easy to make a cheesecake bite! Strawberries are absolutely beautiful this time of year and they also just happen to be the perfect vessel for this no-bake treat.

Cheesecake Stuffed Strawberry Bites (click here to view and print recipe)
1 (8 ounce) package cream cheese, softened
1/3 cup powdered sugar
2 teaspoons lemon juice
48 medium strawberries, whole
1/2 cup graham cracker crumbs
Beat together creme cheese, sugar, and lemon juice until creamy; set aside. Using a paring knife, hollow out top of each strawberry, making a shell. Using a pastry bag, fill each just slightly above the tops with cream cheese mixture. Place on cookie sheets. Dip filled strawberries into graham cracker crumbs and place back on cookie sheet. Refrigerate to chill and set.

Can you freeze these?
Forget the graham crackers..how about chocolate?
Seal in the top with melted chocolate and the cheesecake won’t dry out if you have to make it ahead of time.

Nope, just take a Popsicle stick and scoop out the middle.
