Summer parties can be tough on vegetarians. We carnivores love to throw every kind of meat on the grill, and host backyard barbecues with little or nothing delicious to serve our veggie loving guests. Not anymore! These simple and delicious “Slice and Serve Party Sandwiches” will wow your vegetarian and non-vegetarian guests alike.

This impressive sandwich can be prepared in advance and then sliced and served to your guests throughout the party. It also makes an eye-catching centerpiece to a buffet table!
A loaf of french bread is hollowed out and filled with a colorful and flavor-packed salad. There are cherry tomatoes, slices of red onion, balls of fresh mozzarella cheese and even some cannellini beans tossed in for a protein boost!
Slice and Serve Salad Sandwiches (click here to view and print recipe)
1 loaf (16 ounce) French bread, about 20 inches long
1 package (10 ounce) romaine salad mix
1 can (16 ounce) cannellini beans, rinsed and drained
1 cup grape tomatoes, cut in half
1/2 medium-size red onion, thinly sliced
1 cup fresh mozzarella balls (small size)
1/3 cup balsamic vinaigrette salad dressing
2 tablespoons lemon juice
Cut a 1/2 inch thick slice from top of bread, and set top aside. Hollow out bread using a serrated knife, leaving a 1-inch shell; reserve soft bread for another use. Set bread shell aside.
Combine salad mix and next 4 ingredients. Combine dressing and lemon juice; drizzle over lettuce mixture. Toss.
Fill bread shell with lettuce mixture; replace top. Slice and serve.
