Tex-Mex Crockpot Chops

The hotter it gets outside, the less I want to heat up the kitchen.  This time of year I love to plug in the crock-pot for an easy fix-it and forget-it dinner!  Pork is so fantastic when prepared in a slow cooker and this meal couldn’t be easier.

Tex-Mex Crockpot Chops  (click here to view and print recipe)

4 bone-in pork chops

1 can (15 ounces) hot chili beans

1 jar (16 ounces) thick and chunky style salsa

1 can (8 ounces) shoe peg corn, drained

2 cups cooked rice

Place pork chops in crockpot.  Add beans and salsa.  Cover and cook on high 2 1/2 hours.  Stir in corn.  Cover and cook 30 minutes longer.   Serve over hot, cooked rice.
