Cannoli Gelato Sandwiches

I love the idea of taking a classic dessert, giving it a little twist, and then transforming the dish into something new and exciting.  Today I wanted to take all the flavors we have come to love in an Italian Cannoli and turn it into a summertime treat.

Gelato, mini chocolate chips, and orange zest are sandwiched between Italian pizzelle cookies and rolled in chopped pistachios.  When you are ready to serve, dust with a bit of powdered sugar for a beautiful presentation.  These are great to make in advance, store in the freezer, and then serve at your next summer bash!

This recipe is an ice cream sandwich, but made with gelato.  So the question is, what’s the difference between gelato and ice cream?

It turns out the difference is the amount of air that is incorporated during the freezing process.  When making gelato, the goal is to incorporate the least amount of air possible, resulting in a denser, smoother, and creamier product.  Actually, by incorporating less air you are able to use less heavy cream in the mixture.  That means that gelato is actually lower in fat than ice cream!  (Does that mean I can have two bowls?  Just wondering…)

1/2 cup gelato (vanilla or pistachio flavor)

1 Tablespoon mini chocolate chips

1/2 teaspoon orange zest

2 Italian pizzelle waffle cookies

2 Tablespoons chopped pistachios

Powdered sugar

In a small bowl, gently combine the gelato, mini chocolate chips, and orange zest. Place one of the pizzelle cookies on a flat surface.  Carefully spread the gelato mixture all the way to the edge and top with the other pizzelle cookie. Roll the edges of the gelato sandwich in the chopped pistachios. Place in freezer until gelato is firm. To serve, dust with powdered sugar and enjoy!  Makes one sandwich.
