Linguine with Arugula

Looking for an easy Italian dish that can be whipped up at a moments notice? Try this recipe for “Linguine with Arugula!”
Peppery arugula with the rich, creamy tang of Parmesan cheese is tossed with linguine. It’s an effortless Italian meal in minutes!
Here is what you will need:
-Linguine
-Olive Oil
-Arugula
-Parmesan Cheese
Linguine with Arugula (click here to view and print recipe)
1 box (16 ounces) dried linguine
1/2 cup extra virgin olive oil
5 ounces baby arugula
1 cup freshly grated Parmesan cheese, divided
Salt and freshly ground black pepper to taste
Cook the pasta according to package directions and drain. Heat the olive oil in the pasta pan, then add the drained pasta, the arugula and 1/2 cup of the cheese. Season with salt and freshly ground black pepper, to taste. Toss over medium heat for until the arugula is just wilted, then remove the pan from the heat. Serve immediately, sprinkled with the remaining Parmesan cheese.
Serves 6.

Linguine with Arugula – love love love it! It was really easy to make, but everyone loved it. I actually made it for a dinner / pot lock type of gathering and was so pleased that it came out so good – I had no leftovers to take home with me!

Meatballs the size of tennis balls were the stars of Marianna’s Italian feasts. My mother-in-law never made anything small and her meatballs were delicious beyond compare. Large, moist, and very Italian. She was the ultiimate hostess and all her dishes were wonderful. Great memories of an unforgettable woman.
