Sliders are all the rage, and we are always looking for new ways to enjoy chicken at mealtime.  No wonder these delicious, innovative and adorable grilled chicken sliders came out on top this week in our grilling contest!  Everyone say “hello” and “congratulations” to our latest winner, Jeanette Nelson!

“DOWN-ON-THE-ISLANDS” CHICKEN SLIDERS   (click here to view and print recipe)

Get a taste of the tropics with sliders made from ground chicken loaded with spices and flavor, along with a ginger-mango mayo, and a spicy-sweet pineapple glaze.


  • Citrus Ginger Mango Mayo:
  • 2/3 cup fat-free mayonnaise with olive oil
  • 1 teaspoon roasted ground ginger
  • 1/2 cup diced ripe mango
  • 1 tablespoon fresh lime juice
  • 1 teaspoon fresh lemon zest
  • Patties:
  • 2 pounds ground chicken
  • 2 tablespoons soy sauce
  • 1/3 cup minced ripe papaya
  • 1 tablespoon Tabasco Chipotle Pepper Sauce
  • 1/4 cup panko bread crumbs
  • 4 large garlic cloves, finely minced
  • 1 teaspoon ground allspice
  • 1 teaspoon Asian Sea Salt (prefer McCormick)
  • 2 teaspoons ground madras curry powder
  • 1/2 teaspoon roasted ground cumin
  • 1/2 teaspoon red pepper flakes
  • Sweet-Chili Pineapple Glaze:
  • 2/3 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons pineapple preserves
  • Other ingredients:
  • 12 mini burger buns or small soft wheat dinner rolls
  • 3/4 cup thinly sliced sweet onions
  • 1 bag (5 oz) mixed baby salad greens


Preheat a gas grill to medium-high heat. For citrus ginger mango mayo: Combine all ingredients to mayo (except for zest) in a food processor and process until smooth. Transfer to small bowl and stir in lemon zest. Cover and refrigerate. For patties: combine all patty ingredients in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide chicken mixture into 12 equal portions and, using your hands, shape into 12 small burgers about 3 1/2-inches wide. Place patties on a platter; cover and refrigerate until ready to grill. To make sweet chili pineapple glaze: combine all glaze ingredients in a small bowl; Set Aside. Place patties on grill and grill until chicken is cooked through, turning once, about 6-7 minutes each side; basting often with the glaze. While patties are cooking, place rolls, cut side down, on outer edges of the rack to toast lightly. To assemble sliders: Place equal portion of citrus ginger mango mayo on top and bottom cut side of roll. On each roll bottom, layer with small amounts of baby salad greens, chicken patty, onion slices, and roll tops. Serve any remaining citrus ginger mango mayo with sliders!

Notes: Makes: 12 sliders to serve 6, prep time: 25 minutes, grilling time: 12 minutes

“I plan on using my prize money to buy Christmas presents for my family and if I would win the grand prize than my family will have a great Christmas!”
