“Lime in ‘da Coconut” Summer Spritzer

Imagine this for a moment:  a fun and flavorful summer cocktail….for under 150 calories!  That’s right, this is one beverage you can imbibe and still feel confident in a swimsuit.

The inspiration for this drink came when I was browsing the seltzer aisle over at Target.  I am a major fan of sparkling water and love just about every brand and flavor on the market.  Suddenly something new caught my eye from La Croix, a coconut flavored seltzer!  I wasn’t sure what to expect, but I was ready to give it a go.  It was amazing how the water had a sweet essence, even with zero calories and no artificial sweeteners.

That’s when it hit me, this sparkling water was born to be a mixer!  I had some coconut flavored rum sitting around from a recipe a long time ago and ding!  With a dash of lime juice and a quick garnish, the “Lime in ‘da Coconut Summer Spritzer” was born.  We all know (but sometimes don’t want to admit) that party drinks can be packed with calories.  In this recipe with under 150 calories, you can finally have your cocktail and drink it too!

LIME IN ‘DA COCONUT SUMMER SPRITZER (click here to view and print recipe)

2 ounces Coconut flavored rum

6 ounces Coconut flavored seltzer water

Juice of 1/2 lime

Garnish:  lime slice

Fill a highball glass with ice.  Pour in coconut rum, coconut seltzer, lime juice, and stir.  Garnish with a lime slice.  Enjoy on a warm summer day with friends.  Cheers!
