Patriotic Parfait-tini

This 4th of July, celebrate with a quick and easy “no-recipe” Parfait-tini!
To tell you the truth, I came up with this dessert because of a recipe failure. I had an idea for a new and innovative strawberry cake with a fantastic frosting, and let’s just say, it didn’t go as planned! However the base of the cake was still delicious and I didn’t want to waste what I had created. That’s when this cute summer treat was born! I decided to cube the leftover strawberry cake, layer it with blueberries and whipped cream in a martini glass and name it a parfait-tini. Don’t you love it when something seems to go wrong and you just turn it on it’s head into something oh so right?!
If you want to make this patriotic dessert, you can simply purchase a prepared strawberry cake or whip up a sheet cake from a strawberry cake mix. Either way, it is a great make-ahead recipe when you are expecting a house full of guests!
Red, White and Blue Parfait-tini’s
Blueberries
Whipped cream
Prepared strawberry cake
Strawberries
In a martini glass, layer blueberries, whipped cream and strawberry cake. Top with fresh strawberries and blueberries. The parfait-tini’s can be prepared a day in advance and stored in the refrigerator until you are ready to serve.
