Here Comes The Bride!

Wedding bells are ringing!  Before the beautiful bride walks down the aisle, there are plenty of parties and showers to celebrate the pending nuptials.  If you are looking for a bridal shower activity, a delicious dessert, and even a gift idea, you have come to the right place!

As young couples start their life together a well-prepped kitchen is a must, and there is nothing like a sturdy and efficient stand mixer!  This one from Breville is perfect for someone who is new to baking.  I love the beater with the rubber scrapers already attached.  It cleans the sides of the bowl as it mixes!  This model also comes with a built in timer and easy to follow speed guide on the side.  (More photos here)

If you are looking for a wedding shower activity, look no further than this adorable Tiered Cakelet Pan from Nordic Ware.  Prepare the individual sized cakes in advance and then allow your party guests to express their creativity and decorate!

You can provide frosting in an array of colors, and offer a variety of sprinkles and embellishments.  (No need to get too intricate or fancy…all of the looks here I created with prepared icing and sprinkles from the baking aisle at Target!)  It is so much fun to sit around the table with all your girlfriends and create personalized cakes.  The best part is, dessert is done!  (To take a peek at a few more of the looks I created, check out this photo gallery.)

WHITE CHOCOLATE COCONUT MINI WEDDING CAKES (click here to view and print recipe)

1/2 cup sugar

1/2 cup butter, softened

3 eggs

2 tablespoons lemon juice

1/2 teaspoon vanilla

1 1/2 cups flour

1/2 teaspoon baking soda

1/2 cup buttermilk

2 tablespoons lemon juice

1/3 cup white chocolate chips, melted

1/2 cup coconut

2 teaspoons lemon peel

Heat oven to 350 degrees F.  Grease and flour Nordic Ware Tiered Cakelet Pan; set aside.  In large bowl, beat sugar and butter on medium speed, until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Stir in lemon juice and vanilla.  Sift together flour and baking soda.  Add flour mixture, alternating with buttermilk, mixing well and scraping bowl often.  Blend in lemon juice, white chocolate, coconut and lemon peel.  Spoon batter into prepared pan, spreading batter up to top edges of each well.  (Batter will be lower in centers.)  Bake 22-26 minutes, until toothpick inserted comes out clean.   Cool 10 minutes in pan; invert onto cooling rack and cool completely.  Decorate as desired.  Makes 6 cakelets.
