Easter Malt Cupcakes

There is nothing like the allure of Easter candy.  Bright colors, adorable shapes… and how can we forget Peeps!  Some may love to bite the ears off a chocolate bunny or lick the inside of a Cadbury Creme Egg, personally, I am all about the Whoppers Robin’s Eggs.  There is just something about that candy shell and malted interior.  Luckily they only sell these for a limited time each year!  Using my favorite Easter candies as inspiration, I wanted to create a cupcake with the same flavors.  Here I added Malted Milk powder to a white cake mix and vanilla frosting.  (For all you chocoholics out there, you could also use a chocolate cake mix, chocolate frosting and chocolate flavored Malted Milk powder!)  Top with some coconut “grass” and, of course, those fantastic Robin’s Eggs.  Happy Easter Better Recipes!

EASTER MALT CUPCAKES (click here to view and print recipe)

Ingredients

Cake:

1 package (18.25 ounces) White Cake Mix

1 cup water

1/3 cup oil

3 eggs

1/2 cup Malted Milk powder

Frosting:

1 can (16 ounces) Vanilla Frosting

1/2 cup Malted Milk powder

Decorations:

1 cup shredded coconut

Green food coloring

1 cup Whoppers Mini Robin Eggs candy

Directions

Pre-heat oven to 350 degrees F.  Prepare cupcake pan with paper baking liners.

Blend cake mix, water, oil, eggs and Malted Milk powder until moistened.  Beat with a mixer on low speed for 2 minutes or whisk by hand for 2 minutes.

Fill cupcakes 2/3 full.  Bake for 18-22.  When toothpick inserted in the center comes out clean, the cupcakes are done.  Allow cupcakes to cool in pan for 10-15 minutes then remove to a wire rack.  Cool cupcakes completely before frosting.

For frosting:  Combine vanilla frosting with Malted Milk powder until combined.  Frost cupcakes.

For decorations:  In a ziplock bag, combine shredded coconut and a few drops of green food coloring.  Seal and shake bag until all of the coconut is dyed green. Sprinkle on top of frosted cupcakes to resemble grass.  Top with candy eggs.
