Week 7 “Banana Bread” Winner

Break out the old 45’s and slip on your blue suede shoes, it’s time for a culinary tribute to Elvis!

The winning recipe from our banana bread week is a tribute to the King of Rock and Roll himself.  This is “Ode to Elvis Peanut Butter Swirl Banana Bread!”  Elvis was famous not only for his music and electric hips, but his unique palate also grabbed attention.  One of his favorite dishes was a fried peanut butter and banana sandwich.  Our winner, JaNae Worthen (you can call her “Pixie”), paid homage to this dish by turning it into a creative and delicious banana bread.  I think this recipe will go platinum!



  • 2 C flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 C butter, room temperature
  • 1 C brown sugar
  • 1 egg and 1 egg yolk
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 5 overripe bananas, mashed
  • 1/2 C peanut butter


Preheat oven 350 degrees. (325 if using a glass pan) Spray a 9-by-5-inch loaf pan with nonstick cooking spray; set aside. Combine dry ingredients in a medium-sized bowl; set aside. Cream butter and sugar in mixer bowl until well blended. Add egg and egg yolk, one at a time, and beat until fluffy. Add extracts; fold in mashed bananas. Stir in dry ingredients gradually, mixing just until combined. Heat peanut butter in microwave just until warm and easily spreadable, about 20 seconds. Pour half of batter in pan. Drop half of peanut butter by spoonfuls on top of batter. Swirl with a knife. Repeat with remaining batter and peanut butter. Bake 60 minutes or until toothpick inserted into the center comes out clean. Cool for 10 minutes; turn out onto cooling wrack to cool completely.

Number of Servings: 10-12

You can see the peanut butter swirl on top and in the middle of the bread.  This ensures that you get a taste of rich peanut butter in every bite!  The recipe doesn’t specify creamy or crunchy peanut butter, but I think using crunchy gave the banana bread a great texture and made the swirl really stand out.  Now, let’s hear from Pixie, the creative cook behind this winning recipe!

“Pixie is a childhood nickname but also the name of my dream restaurant or catering company, ‘Pixie’s Pantry'”

That’s great!  Well you now have a winning track record, so hopefully that dream will soon become a reality!  Tell us how you came up with this banana bread recipe.

“My recipe is a great example of how I like to approach just about every staple dish like banana bread, chocolate chip cookies, or lasagna; something akin to a blank canvas. I like to perfect them to my liking, then, if desired, put a special twist that hopefully makes you want to take a second look. So when I saw an otherwise basic recipe contest, I brainstormed ways to “take it up a notch”  and that’s when I came up with the “ode to Elvis” approach.”

What inspired you to enter the Better Recipes weekly contest?

“Why not?!  Whether or not I was confident that my dish was a winner, one thing is certain,  you can’t win unless you try!”
