4-Ingredient Chicken Dinner!

This recipe is one of my favorites. With just four ingredients, dinner is fast, easy and delicious! These Bacon-Wrapped Cheesy Chicken Rolls are always a hit and they are done in a snap. Plus, you can customize the recipe and make it your own by using your favorite flavor of cream cheese. By the way, it’s wrapped in bacon…what more can you ask for!?

BACON-WRAPPED CHEESY CHICKEN ROLLS
3 large boneless, skinless, chicken breast halves
8 ounces whipped cream cheese with chives*, divided
1 Tablespoon butter, divided
6 slices bacon
1. Heat oven to 400 degrees. Split each breast in half to make 6 pieces. Place pieces between waxed paper and pound each to 1/2″ thickness. Spread each with about 3 Tablespoons of cream cheese and dot each with 1/2 teaspoon butter.
2. Fold long ends over filling and press to stick together. Carefully wrap one slice of bacon around each roll from end to end. Place seam side down on a foil-lined rimmed baking pan. (some filling will ooze out)
3. Bake for about 35 minutes or until chicken is just tender and juices run clear when meat is pierced. Place pan under broiler for about 5 minutes to crisp the bacon. Serves 6.
(*Note- I have also made this with some of the flavored cream cheeses in tubs, like spinach or sun-dried tomato. They work fine, too!)

Do you think this could be adapted for the crockpot?
I love the idea of using flavored cream cheese for your chicken dish. I think I’ll try it with the reduced-fat version and reduced-fat butter.

We tried this recipe last night – it was easy to make and tasted great! We used the onion and chive flavored cream cheese.
