Luscious Lemon Bites

Spring is bright and refreshing after months of winter. These zesty lemon cookies taste like a little bite of spring! They are a light and citrusy treat perfect for this time of year.

LUSCIOUS LEMON BITES
1/2 cup butter, softened
3/4 cup sifted confectioner’s sugar
1 large egg yolk
Juice of 1 lemon (about 3 Tablespoons)
Zest of 1 lemon (about 1-1/2 Tablespoons
1/2 teaspoon vanilla extract
1-1/2 cups all-purpose flour
Topping:
3 Tablespoons granulated sugar
1 Tablespoon grated lemon zest
1. Heat oven to 350 degrees. Lightly grease a baking sheet or line with parchment paper.
2. In a mixer bowl, blend butter and confectioner’s sugar until light and fluffy, about 4 minutes. Mix in egg yolk until blended. Add lemon juice, lemon zest, and vanilla. Gradually mix in flour.
3. In a small bowl, stir together the topping mixture. Roll dough into1-inch balls and dip tops into topping mixture; place on prepared baking sheet and press down lightly. Bake for 10-12 minutes. Cool on wire rack. Makes about 2 dozen cookies.

I love your website but cannot use your recipes because I am a diabetic and MUST have the nutritional value of any recipe. Please!!
80% of other sites are now giving an option to see nutritional values can You do the same??
Hi Gayle! I will try to start uploading recipes and writing blogs where I can confirm the nutrition information. It might not be possible all the time, but I will certainly start making an effort! Thanks for your feedback
I, too, am diabetic. I just look up the carb count for each of the ingredients and divide by the number of servings. You can Google and find sites that will give you the carb count for generic and name brand ingredients if you don’t happen to have that item on hand. You can also substitute ingredients such as Egg Beaters instead of eggs, etc., to bring down the carbs.
I’m an RN and healthy alternatives is do-able to any recipe:) I plan to make this with WHOLE wheat pastry flour, eggbeaters, & splenda. This will cut major calories. If the recipe had a leavening agent included then I would use Splenda for baking (half sugar/splenda mix) because you need some real sugar with the leavening, to get it to rise.
Very easy to make. The lemon I used was too big, so they came out a bit extra lemony, but still delicious!The lemon zest & sugar topping really makes the cookie!
