April “Fool”!

Save room for lots of calories and fat today because this rich, creamy and decadent dessert is a killer.

APRIL FOOL!!!
Actually, this is an updated and healthier version of a dessert called a “fool.” Fools are usually made with cups of cream, but my version has only 1/3 of a cup and fat-free Greek yogurt is used instead of more cream. The strange name of this dessert comes from the French word “foule” which means pressed or crushed, and refers to the heavenly combination of fruit and cream, or in this case, some cream and mostly yogurt. It is creamy, satisfying, and easy.
RASPBERRY FOOL
One 10-ounce package frozen unsweetened raspberries, thawed, drained, and divided
1/3 cup confectioner’s sugar
1/2 teaspoon vanilla extract
1/2 teaspoon grated lemon peel
1/3 cup well-chilled whipping cream
6 ounce container fat-free or lower fat Greek yogurt
Fresh raspberries
Ladyfinger cookies
1. Place half of the raspberries in a food processor or blender and process until smooth. Place a fine mesh strainer over a large mixing bowl and strain mixture into bowl, pressing the liquid out with a rubber scraper or spoon; discard seeds in strainer. To the puree in the bowl, whisk in confectioner’s sugar, vanilla, and lemon peel. Stir in the remaining raspberries.
2. In a mixer bowl, whip the cream until soft peaks form. Gently fold the whipped cream and yogurt into the raspberry mixture, just until blended. Spoon the fool into 4 cocktail glasses or other dessert dishes. Cover with plastic wrap and refrigerate at least 1 hour or up to one day. To serve, garnish with fresh raspberries and serve with ladyfinger cookies.
Note: Only thick, Greek yogurt will work with this recipe. Also remember that cream will whip better if it is very well-chilled, plus chill the beaters and bowl for best results. You can also use any frozen berry or fruit in place of the raspberries, but chop if they are too large.

That looks absolutely amazing! I would love to see a blueberry version.
It’s a great dessert. I love yogurt particularly berries. Happy Easter!
