A Taste of Paris in Your Own Kitchen
Who says eggs are just for breakfast? They are a versatile, inexpensive protein that is a great option any time of day. This recipe for an “Omelette aux Fines Herbes” is an easy and elegant dish guaranteed to transform your home kitchen into to a chic French Bistro.
FRENCH BISTRO HERB OMELET
3 large eggs
Salt and pepper to taste
1 Tablespoon chopped flat leaf parsley
1 Tablespoon chopped fresh herbs of choice (chives, thyme, tarragon, rosemary, etc)
1 teaspoon butter
1 teaspoon olive oil
- In small mixing bowl, whisk together the eggs, salt, pepper, parsley, and herbs.
- Place butter and olive oil in a medium skillet and heat until butter is foamy and hot.
- Pour egg mixture into the center and heat for about 15 seconds. Stir the eggs with a fork, so the runny part flows between. Repeat several times, scraping around the edges, until eggs are set. When the eggs are just barely set, fold omelet in half using a spatula. Invert onto serving plate. Serves 1.
